The origins of Il Borro Tuscan Bistro
Il Borro Tuscan Bistro was born from Ferruccio Ferragamo’s desire to bring the authentic flavours and slow rhythms of Il Borro – organic estate in the Tuscan countryside where sustainable philosophy and ethical vision are an integral part of the cuisine – back to Florence. Simplicity, respect and attention to the environment are of paramount importance both in the menu and in the location. Most of the products used, such as vegetables, cereals and flours, come directly from the family farm, which boasts an organic vegetable garden, an olive press and a wine cellar.

Design
and sustainability
The concept of Il Borro Tuscan Bistro is inspired by Florence’s historic, intellectual and cosmopolitan character. The design focuses on the use and enhancement of Tuscan natural materials and neutral but warm colors, all inspired by medieval paintings and Macchiaioli canvases. The reproduction of many engravings from Ferruccio Ferragamo’s private collection – a characterizing element of the architectural concept of the restaurants – is also combined with the lights, colors, fabrics and the use of wood for the boiseries: a testimony to the love for history, traditions and their influence on arts. All the components chosen for the Tuscan Bistro are sourced in Tuscany, a way to ensure higher quality and limit as much as possible the emissions deriving from transportation. LED lights were installed to limit energy waste, furthermore, the top-quality kitchen equipment allows staff to produce fine food while lowering environmental impact and energy consumption.

The successful concept of Il Borro Tuscan Bistro Firenze was replicated in other locations. The aim was to recreate the charming and welcoming atmosphere of Il Borro and to offer the most authentic flavours and traditions of Tuscany. In the heart of Valdarno, thus only a few minutes from Florence, at Il Borro Estate’s splendid Viesca, as well as in Dubai’s cosmopolitan Turtle Lagoon and, more recently, in London’s exclusive Mayfair district.
