With an informal yet chic atmosphere, Il Borro Tuscan Bistro is a true concept shop, halfway between a restaurant and a wine bar, an innovative space that places excellence, in all its forms, at its core. In the entire dining concept, Ferruccio Ferragamo’s family collaborated with Chef Andrea Campani to share their vision: simplicity and a focus on sustainability, elegance and authenticity, values reflected both in the dishes and in the restaurant’s ambiance. Il Borro Tuscan Bistro offers a bistro-style menu featuring familiar, traditional dishes, where the quality of the ingredients takes center stage.

The Bistro and its origins

Il Borro Tuscan Bistro was born from Ferruccio Ferragamo’s desire to bring into the city the authentic flavors and relaxed rhythms of Il Borro, the historic organic estate in the Tuscan countryside that he has led since 1993. At the heart of everything at Il Borro are respect for and care of the environment, values that also inspire the Bistro’s philosophy. In the kitchen, many of the ingredients come directly from the Estate and its Organic Garden: fresh, seasonal vegetables; olive oil produced in the Estate’s own mill; wines made from Il Borro’s vineyards and aged in its cellar; and products such as flours, grains, and tomato purée sourced from the Estate’s own crops.

Executive Chef
Andrea Campani was born in Montevarchi, in the heart of the Valdarno. Here, as a child, he learnt the importance of quality and in-season food products. After studying at the hotel/catering high school of Florence, he began his professional career in a historical Chianti restaurant, famous for its very Tuscan cuisine. Andrea’s passion, curiosity, determination and Tuscan-traditional approach to food have always guided his illustrious career. He has never shied away from a new challenge, successfully reinterpreting food and wine while creating simple yet innovative dishes that, in some ways, are a testament to his personality. In 2013, when Andrea met Ferruccio Ferragamo, he learnt about the ambitious Il Borro restaurant project, which he immediately embraced. Today he is the Executive Chef of the Il Borro restaurants: Osteria del Borro and Il Borro Tuscan Bistro.

Design and
Sustainability

The concept of Il Borro Tuscan Bistro reinterprets the most historic side of Florence, evoking an intellectual and cosmopolitan atmosphere. The design emphasizes the use of natural, locally sourced Tuscan materials and a palette of warm, neutral colors inspired by medieval painting and the canvases of the Macchiaioli. Lighting, colors, fabrics, and the use of wood for the boiserie are complemented by reproductions of many engravings from Ferruccio Ferragamo’s private collection.
